Healthy Recipe: Clearwater Citrus Chicken Bowls

Serves 4 · About 30 minutes

Ingredients: 1.5 lb boneless chicken breast; juice of 2 oranges + 1 lime; 2 tbsp olive oil; 2 garlic cloves minced; 1 tsp cumin; salt & pepper; 4 cups cooked quinoa or brown rice; 2 cups shredded cabbage or bagged slaw mix; 1 avocado; fresh cilantro.

Directions: Whisk citrus, oil, garlic, cumin, salt, and pepper. Marinate chicken 15 minutes (or overnight). Grill or pan-sear until cooked through; slice. Build bowls with grain, cabbage, chicken, avocado, and cilantro. Optional: drizzle leftover marinade that was set aside unused (never reuse raw marinade).
